This is how to turn a plain piece of toast into a brunch fit for a king!
Poach your eggs – mine are that funny shape because for some reason I’m terrible at poaching so I use silicone poach cups… I will one day learn. Whilst they are poaching, heat coconut oil in frying pan. Once it has melted, add bacon. After a few minutes add in mushroom. Toast bread. Once the bacon is pretty much cooked add a handful of spinach (cook for about a minute if that). Pop it all together!
