How to: Egg, Veg and Couscous Brunch


This is one colourful, healthy bowl of goodness that is extremely easy to make! All you need to do is:

Start with your egg and do that which ever way you prefer – I’ve simply fried mine in a bit of coconut oil but I often boil or pouch to make it a little healthier and change it up.

Pop your asparagus under the grill (with a drizzle of olive oil and a sprinkling of salt) for roughly 5 minutes.

Just as my egg is almost cooked, throw in your kale just to soften it up a little.

Chop up your cherry tomatoes, cucumber, orange pepper and throw them in a bowl, with your asparagus which should be beautifully grilled by now.

Add your kale and egg and top with your couscous (cooking instructions vary on which couscous you buy so see on the back of the packet).

If this is a bit too dry, drizzle it with a bit of olive oil and lemon juice but I’m happy as long as my eggs runny!
